The Truffle Pie

It has become a bit of an obsession of mine to cook the perfect truffle pie as friends and family will all attest. “Come and try my pie ” I shout from the hills, and they come. I began making pork pies with little truffle quail eggs tucked inside. Although the flavour came through in the eggs it was buried in the pork mix. I moved on to rabbit which worked much better but a live rabbit visited me in the greenhouse and I understood . The perfect pie is made from potatoes. The gentle flavour allows the truffle to shine through and catch the moment .
