Full Circle

When Tom first put the truffle in my hand I knew my life would be altered. Yes I had been mushroom hunting for years but truffles were different, hidden and surrounded by mysterious myths and secrets. To celebrate the pea size find we all feasted on lobster soup and prawns straight from the sea where I live . It’s prawn season and this always reminds me of that day . A couple of days ago while walking home Minnie dug a large and extraordinary truffle. I could smell it before it came out of the ground. Today I wandered down to the sea to meet Will who had caught me some prawns. I took them home,boiled them up and ate them with toast and truffle butter made with the extraordinary one. OMG. The flavour. The sea, the earth . I took photos but just had to eat in a kind of frenzy. This is what happens when you find the perfect umami match..

Due to a very hot June and July with temperatures akin to those in Southern Europe the English truffle season has started very early.

In Cahours the doors opened to a John lewis pillow of white mashed Potato.pebbled dashed with a crunchy black rock of Spanish black fruit. Outside exhausted French men and some women clambering at the walls and moaning. Inside we rested our heads on this bumpy mouth watering cooing dove ride. As a wedding its fish and water. As the metal banded doors opened to the joy of truffle leaving Eve naked with Adam . I like the tinners rabbits stuccoed on the cornish cathedral where the legends of the mighty hare are hidden in a good disguise. From more up and cominging new religions hitting the feast, day.

It has become a bit of an obsession of mine to cook the perfect truffle pie as friends and family will all attest. “Come and try my pie ” I shout from the hills, and they come.
